Ingredients:
2 large eggs
2 C. whole wheat flour
1 C. unsweetened
apples
auce
1/2 tsp.
cinnamon
1/4 C. light oil (sunflower, corn, canola)
1/2 tsp. baking soda
1 C. fresh or frozen
blueberries
1/2 tsp. salt
Instructions:
Prepare muffin cup with oil, or use paper or foil liners. Preheat oven to 425 degrees F. In a
large bowl
, stir together flour, cinnamon, baking soda and salt. Set aside. In a
small bowl
, beat eggs until lemony, then stir in applesauce and oil. Pour egg mixture into the dry ingredients, and beat until well mixed. Gently stir in blueberries. Fill muffin cup 2/3 full. Bake at 425 degrees F. for 30 minutes, or until nicely browned. Serve warm or cold.
