Ingredients:
2 lg. baking
potatoes
1 bullion cube dissolved in 1/4 C. boiling water
1 Tbsp. chopped
scallions
or fresh
onion
1 tsp. fresh
lemon juice
dash pepper
1/2 C.
cottage cheese
1/4 tsp. salt
Instructions:
Bake potatoes until done. Cut in half lengthwise. Scoop out potato from each half without breaking skin. Place potato in large
mixing bowl
. Add cottage cheese, dissolved bullion, scallions, lemon juice, salt and pepper; beat until smooth. Spoon into potato skins. Place on baking sheet and bake at 350º for 10 to 15 minutes until potato is slightly browned. (about 90 calories/half).
