Ingredients:
3 green onions, sliced
1 stalk celery, sliced
1 clove garlic, minced
2 tablespoons olive oil
1 pound bay scallops or quartered sea scallops
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 medium zucchini, thinly sliced
1 tablespoon lemon juice
1/4 cup flaked coconut, toasted
3 cups hot cooked rice
Instructions:
Cook onions, celery and garlic in oil in large skillet over medium-high heat until vegetables are tender crisp. Stir in scallops, salt, pepper, zucchini and lemon juice. Cook until scallops are opaque, about 2 to 3 minutes. Garnish with coconut and serve with hot rice.
