Ingredients:
6 fresh or frozen
red snapper
or other white fish fillets (about 1-1/2 pounds)
salt and ground
black pepper
1/4 cup
lemon juice
, divided
1 cup fine dry bread crumbs
2 tablespoons vegetable oil
1/4 cup butter, divided
1 4-ounce can sliced
mushrooms
, drained
1/2 cup sliced green
onion
s
3 tablespoons chopped fresh
parsley
6 ounces frozen crab meat and/or
shrimp
, thawed
1 tablespoon dry
sherry
3 cups hot cooked rice (cooked in
chicken broth
)
Instructions:
Sprinkle fish with salt, pepper and 2 tablespoons lemon juice; roll in breadcrumbs. Cook fish in oil and 2 tablespoons butter in 10-inch
skillet
until golden brown on both sides and flakes easily. Transfer to warm serving dish and keep warm. Add remaining 2 tablespoons butter to skillet and heat until brown; stir in mushrooms, onions and parsley. Cook over low heat 2 to 3 minutes. Add seafood, sherry, remaining 2 tablespoons lemon juice, 1/2 teaspoon salt and 1/4 teaspoon pepper; heat thoroughly. Spoon over fish fillets and serve with fluffy rice.
