Slow Cooker Turkey Chili and Beans

Ingredients:
1 Pound GROUND TURKEY
2 14-Oz. Cans whole peeled tomatoes, drained
2 14-Oz. Cans kidney beans, drained and rinsed
1 14-Oz. Can black beans, drained and rinsed
1 12-Oz. Can tomato sauce
1 Cup finely chopped celery
1 Cup finely chopped carrot
1 Cup finely chopped onion
3 Tablespoons chili powder
4 Teaspoons ground cumin
2 Teaspoons ground red pepper
1 Teaspoon salt
1/2 Cup Amaretto
1/2 Cup Monterey Jack cheese, shredded
Instructions:
Cook ground turkey in a heavy skillet over medium heat until the pink color disappears.
Place cooked ground turkey and all other ingredients, EXCEPT cheese in a slow cooker. Mix well and cook on HIGH for 7 hours.
For a thicker sauce, remove the cover for the last hour.
Garnish with cheese.
