Ingredients:
3 large onions, chopped
3 large green peppers, chopped
3 celery ribs, chopped
12 garlic cloves, minced
1 1/2 cups butter
3 lbs fully cooked smoked sausage, cut into 1/2-inch slices
9 cups chicken broth
6 cups uncooked long grain rice
3 cups chopped fresh tomatoes
1 1/2 cups chopped green onions
1/2 cup minced fresh parsley
3 tbs Worcestershire sauce
3 tbs hot pepper sauce
3 tbs browning sauce
1 tbs salt
1 tbs pepper
Instructions:
In a large skillet, saute the onions, green peppers, celery and garlic in butter until crisp-tender. Place in a very large bowl; stir in the remaining ingredients.
Transfer to three greased shallow 3-qt. baking dishes. Cover and bake at 375 degrees F for 45-50 minutes or until rice is tender, stirring twice.
