Ingredients:
1 jar marinated
artichoke hearts
- (12 oz) drained,
liquid reserved
4 x green
onion
s finely chopped
2 x
garlic
cloves finely chopped
4 whl eggs beaten
2 tbl Atkins Bake Mix
1/2 tsp salt
1/4 tsp freshly-ground
black pepper
8 oz Monterey jack or pepper jack cheese shredded
2 tbl chopped fresh
parsley
Instructions:
Heat oven to 325 degrees. Chop artichokes and set aside. In a medium
skillet
, heat reserved marinade liquid 2 minutes over low heat. Add green onion and garlic; saute 5 minutes, until softened.
In a
mixing bowl
, combine eggs, bake mix, salt and pepper. Thoroughly mix in cheese, parsley, artichokes and onion mixture.
Transfer to an 8- or 9-inch square
baking dish
. Bake 30 minutes, until set. Cool slightly before cutting into squares.
This recipe yields 8 servings.
