Andes Mint Cheesecake

2 pkt junior mints (3-oz.)3 pkt cream cheese (8-oz. ea.) softened2/3 cup sugar3 x eggs1 tsp vanilla extract1 x graham cracker or chocolate crumb crust


Put mints in freezer and freeze. Heat to 350 degrees. Mix cream cheese and sugar until smooth. Add eggs, one at a time beating after each. Mix in vanilla.chop frozen junior mints and sprinkle on cheesecake. Bake 40-45 minutes or until set. Cool. Then chill over night.
