Core and cut apples into quarters.
Slice each quarter crosswise into 1/2 inch chips.
In a separate bowl, mix chopped apples and celery. Arrange in serving plates with sliced emmental cheese.
Sprinkle balsamic vinegar and olive oil on top.
Garnish with sesame seeds and ground black pepper.
