Avocado Feta Salsa Posted in : Appetizers on by : Daphne Ingredients: 2 plum tomatoes, chopped1 ripe avocado – peeled, pitted and chopped1/4 cup finely chopped red onion1 clove garlic, minced1 tbs snipped fresh parsley1 tbs chopped fresh oregano1 tbs olive oil1 tbs red or white wine vinegar4 oz crumbled feta cheese Instructions: In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.
