Broccoli-stuffed Fish Fillets

Ingredients:

1/2 cup finely chopped onion1 tablespoon butter or margarine1 10-ounce package chopped broccoli, thawed and drained1/2 cup soft bread crumbs1/4 teaspoon ground thyme6 fillets of flounder or other white fish (about 1-1/2 pounds)1/4 to 1/2 teaspoon salt1/4 teaspoon ground black pepper2 tablespoons lemon juice1 10-3/4-ounce can condensed cream of mushroom soup1/2 cup (2 oz) shredded Cheddar cheese2 tablespoons dry white wine3 cups cooked rice2 tablespoons chopped pimiento

Instructions:

Cook onion in butter in large skillet over medium heat until tender but not brown. Stir in broccoli, bread crumbs and thyme. Set aside.
Brush fish with lemon juice; sprinkle with salt and pepper. Place about 1/4 cup broccoli mixture on each fillet. Roll up and secure with toothpicks. Place in greased shallow baking dish. Bake at 350 degrees 15 minutes.
Blend soup, cheese, 1/2 cup water and wine. Heat in small saucepan; pour over fish rolls. Bake 20 minutes longer.
Combine rice and pimiento in large skillet; heat thoroughly. Serve stuffed fillets with sauce and hot pimiento rice.
