Cook onion in butter in large skillet over medium heat until tender but not brown. Stir in broccoli, bread crumbs and thyme. Set aside.
Brush fish with lemon juice; sprinkle with salt and pepper. Place about 1/4 cup broccoli mixture on each fillet. Roll up and secure with toothpicks. Place in greased shallow baking dish. Bake at 350 degrees 15 minutes.
Blend soup, cheese, 1/2 cup water and wine. Heat in small saucepan; pour over fish rolls. Bake 20 minutes longer.
Combine rice and pimiento in large skillet; heat thoroughly. Serve stuffed fillets with sauce and hot pimiento rice.
