Carrot Bran Muffins

2 cup flour1 tbl baking powder1 tbl baking soda2 tsp cinnamon1/2 tsp salt1 1/3 cup bran2 cup grated carrots1/2 cup raisins1/2 cup chopped nuts3/4 cup BeeMaid liquid honey3/4 cup milk1/2 cup cooking oil3 x eggs


In a large bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Stir in bran, carrots, raisins, and nuts.

In a separate bowl, beat honey, milk, oil, and eggs together.

Make a well in dry ingredients; pour liquid mixture in well, mixing until just moistened. Spoon into greased muffin tins, filling each two-thirds full.

Bake at 350 degrees for 20 to 25 minutes.

This recipe yields 24 muffins.
