Carrot Cake Bars

Ingredients:

2 cups white sugar1 1/2 cups vegetable oil4 eggs2 cups all-purpose flour2 tsp baking soda2 tsp ground cinnamon1 tsp salt3 (4 ounce) jars carrot baby food

Instructions:

Preheat oven to 350F (175C). Grease and flour a 10×15 inch jelly roll pan. Sift together the flour, baking soda, cinnamon and salt. Set aside.
In a large bowl, beat sugar, oil and eggs until smooth. Mix in the flour mixture. Stir in the baby food carrots.
Spread batter into a 10×15 inch jelly roll pan. Bake in the preheated oven for 20 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
