Creole Rice Salad

3 cups cooked rice, cooled to room temp1/2 cup celery, minced fine1/4 cup green pepper, minced fine1 tablespoon parsley, fresh, minced fine3 tablespoons green onion, minced fine1/2 cup yellow onion, minced fine1/4 cup olive oil, extra virgin1/4 cup pimento-stuffed green olives, sliced1 tablespoon cider vinegar2 tablespoons Creole mustard, or brown mustard3/4 teaspoon salt1/4 teaspoon black pepper, freshly ground1/2 teaspoon Tabasco sauce1/4 cup pickled banana peppers, minced fine4 hard boiled eggs, chopped coarsely


Combine all the ingredients and toss to mix well. Refrigerate for 2 hours and serve chilled.
