French Peas Posted in : Side Dish on by : Daphne Ingredients: 4 Tbsp. butter1 onion, finely chopped2 lb. fresh peas1/2 small head lettuce, shredded1/2 C. bouillon or stock Instructions: Melt 3 Tbsp. butter in the bottom of a saucepan. Sauté onion in butter until soft. Add peas, shredded lettuce and stock. Cover peas closely and simmer for 10 to 15 minutes. Add the remaining Tbsp. of butter and serve.
