Ham Quiche

Ingredients:

3 eggs1 C. half & half1/4 tsp. ground nutmeg1/2 tsp. salt1/8 tsp. pepperFew grains cayenne pepper1/2 lb. cooked ham, cut into thin strips2 C. shredded Swiss cheese1 baked 9 inch pastry shell (in a heat-resistant, non-metallic pie pan)

Instructions:

In a medium-sized bowl, beat eggs, cream, nutmeg, salt, pepper, and cayenne pepper until well mixed. Stir in ham and cheese. Pour mixture into baked pastry shell. Heat, uncovered, in microwave for 5 minutes. Move cooked edges toward center and heat an additional 5 minutes or until a knife inserted in center comes out clean. Turn 1/4 turn after each 3 minutes. Let stand at room temperature 3-4 minutes to finish cooking.
