Healthy Potato Salad Posted in : Diabetic on by : Daphne Ingredients: 2 medium potatoes, peeled and cut into 1/2-inch cubes1 hard cooked egg, sliced1/4 C. chopped celery1/4 C. chopped bell pepper1/4 C. chopped onion2 Tbsp. chopped pimento1 Tbsp. mustard4 Tbsp. light mayonnaise Instructions: Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm, being careful not to overcook. Drain and cool. Mix all ingredients together. Chill before serving.
