Jelly Filled Muffins

Ingredients:

2 cup all-purpose flour1/4 cup sugar1 tbl baking powder1/2 tsp salt1 x egg, slightly beaten1 cup milk1/4 cup melted butter or margarineJelly, jam, or preserves of your choice

Instructions:

Combine dry ingredients in a large mixing bowl. Combine egg, milk, and butter; mix well. Make a well in center of dry ingredients; pour in liquid ingredients and stir until moistened. Fill greased muffin pans one-fourth full.

Spoon 1 teaspoon jelly in center of each muffin cup; spoon remaining batter over jelly, filling each cup half full. Bake at 400 degrees F. for 20 to 25 minutes.

Remove from pan immediately.

Yield: 8 to 10 muffins.
