Lemon Roast Potatoes

Ingredients:

4 lbs potatoes, 8 to 10 peeled1 C. water1/2 C. lemon juice1/3 C. oil, olive3 garlic cloves, minced2 tsp. salt2 tsp. oregano, dried1 tsp. pepper

Instructions:

Cut potatoes lengthwise into thick wedges; place in 13 by 9 inch baking dish. Whisk together water, lemon juice, oil, garlic, salt, oregano and pepper; pour over potatoes, turning to coat evenly. Bake at 325 degrees F. for about 2 hours, occasionally gently turning to keep potatoes well moistened, until potatoes are very tender and moist, and most of the liquid has evaporated.
