Lentil Nut Loaf

1 C. lentils washed2 C. water1 large onion chopped1 C. mushrooms chopped2 Tbsp. oil1 C. nuts ground1 C. breadcrumbs1 Tbsp. lemon juice1 Tbsp. soy saucesalt and pepper1 Tbsp. mixed herbs


Cook lentils in water till soft (1/2 hr). Sauté onions and mushrooms in oil till soft. Mix with remaining ingredients. Place in a greased baking pan and bake at 350F for 30 minutes. Garnish with parsley.
