Lentil Nut Loaf Posted in : Vegetarian on by : Daphne Ingredients: 1 C. lentils washed2 C. water1 large onion chopped1 C. mushrooms chopped2 Tbsp. oil1 C. nuts ground1 C. breadcrumbs1 Tbsp. lemon juice1 Tbsp. soy saucesalt and pepper1 Tbsp. mixed herbs Instructions: Cook lentils in water till soft (1/2 hr). Sauté onions and mushrooms in oil till soft. Mix with remaining ingredients. Place in a greased baking pan and bake at 350F for 30 minutes. Garnish with parsley.
