Marengo Meat Balls With Rice

3 slices bread1/3 cup milk1 1/2 lbs lean ground beef1 cup finely chopped onion1/2 teaspoon salt, divided1/4 teaspoon ground black pepper1 tablespoon vegetable oil2 cups beef broth1 cup canned peeled whole tomatoes, chopped1/2 cup mayonnaise or salad dressing1/4 cup flour1/8 teaspoon ground red pepper1 bay leaf3 cups hot cooked rice


Soak bread in milk 5 minutes. Mix with beef, onion, 1/4 teaspoon salt and black pepper; form into 18 balls.

Heat oil in large skillet; add meat balls and cook until browned. Add broth to skillet and stir to loosen brown particles. Blend tomatoes, mayonnaise, flour, pepper and remaining 1/4 teaspoon salt. Stir into broth; add bay leaf. Cover and simmer 30 minutes. Remove bay leaf. Serve over fluffy rice.
