Mary’s Fruit Cake

150g plain flour150g self raising flour500g mixed dried fruit425g can crushed pineapple (drained)50g glacé cherries, halved2 medium eggs, beaten125g butter or margarine175g soft brown sugar1 teaspoon mixed spicegood pinch salt1 teaspoon bicarbonate of soda


Oven: Fan 150ºC, 300ºF, Gas 2
Standard 160ºC, 325ºF, Gas 3

Line the casserole with a pre–shaped 20cm deep cake tin liner, or line with greaseproof paper.

Add the first six ingredients into a mixing bowl and microwave on high power for 3 minutes. Be sure the mixing bowl is microwavable.

Alternatively, put these six ingredients into a large saucepan and heat slowly on a low temperature until the fat has melted.

Mix well, and put the remaining ingredients into the bowl. Then mix again.

Transfer the mixture to the lined casserole and level the top. You can decorate the top with a few blanched almonds if it is to be a plain fruit cake.

Bake below the centre of the oven for approximately 1¼–1½ hours, or until a skewer inserted into the centre comes out cleanly.

Let it cool in the casserole for 10–15 minutes then turn out and cool thoroughly.

Once cooled, you can decorate the cake with marzipan or icing, both or neither.
