Heat oil in large skillet over medium-high until hot. Sprinkle Creole seasoning over pork. Add pork and onion to skillet. Cook and stir 5 to 7 minutes or until pork and onions are beginning to brown. Add broth, simmer 2 to 3 minutes or until liquid is slightly reduced. Reduce heat to low, stir in sour cream until blended. Add rice, cook 2 to 3 minutes or until throughly heated. Garnish with parsley.
