Overnight Red Beans With Rice

1 C. dried red beans, soaked overnight3 C. watersalt and pepper to taste3 Tbsp. bacon drippings or one small ham hock1 small onion, studded with 2 whole cloves1 clove garlic, finely minced1 rib celery, chopped1/4 C. finely chopped parsley1 bay leaf, broken into pieces1 C. rice, cooked according to package directions


Drain the beans and place in a heavy kettle with water, salt, pepper and bacon drippings or ham hock. Bring to a boil and simmer for 1 1/2 hours. Add the onion, garlic, celery, parsley and bay leaf. Return to a boil and cook for 1 hour longer. Serve on hot rice. Serves 4.
