Salmon Au Gratin

2 C. canned salmon2 Tbsp. grated onion1/4 lb. American cheese, grated3 Tbsp. butter1 beaten egg1/2 C. milk1 C. cracker crumbs1/4 C. chopped green pepper1/4 tsp. salt1/4 tsp. paprikaJuice of 1 lemon


Flake fish and remove bones (or mash well) and skin. Add crackers, onion, green pepper, seasoning, juice, egg and mix well. Butter casserole, layer salmon mixture, then layer cheese and butter, then salmon, top with cheese. Bake 30 minutes at 350 degrees. Serves 4.
