Sausage With Chili Con Queso

1/2 of (10-ounce) can tomatoes and green chiles1 pound pasteurized process American cheese food, diced1 pound pork sausage meat1 pound zucchini, sliced (about 4 cups)salt and ground black pepper3 cups hot cooked rice


Pour tomatoes and green chiles into saucepan. Break tomatoes into small bits. Add cheese and cook over very low heat until cheese is melted, stirring frequently.

Meanwhile, form sausage into 12 balls. Place in ovenproof 10-inch skillet. Cook in 450 degree oven 10 minutes.

Drain off all fat. Top with zucchini slices and sprinkle generously with salt and pepper. Cover and cook 10 minutes longer or until zucchini is barely tender. Remove from oven and cover zucchini and sausage balls with hot cheese sauce. Serve over fluffy rice.
