Smoked Sausage Creole

1 lb smoked sausage, sliced1 cup diced onions1/2 cup diced bell pepper1/2 cup chopped celery1 tbl minced garlic1 cup beef broth1 x (10-ounce) can diced Rotel tomatoes1 x (6-ounce) can tomato sauce1 tbl tomato paste1 tsp Tony Chachere’s Creole Seasoning1/2 tsp black pepper1/2 tsp dried thyme leaves1/2 tsp salt1/2 cup chopped green onions1/2 cup minced parsley4 cup cooked rice


In a saucepot, brown the sausage. Add onions, bell pepper and celery and cook for 5 minutes.

Add garlic and cook additional 2 minutes.

Stir in beef broth, tomatoes, tomato sauce, tomato paste, Creole seasoning, black pepper, thyme and salt. Bring to a boil, reduce heat, and then cook for 30 minutes, stirring occasionally.

Uncover and simmer for 15 minutes, until sauce thickens slightly.

Stir in green onions and parsley. Ladle each serving over 1 cup cooked rice.
