Heat the oven to 375°F. Combine 1/3 cup of the flour, brown sugar, coconut, butter and cinnamon; mix with a fork to a crumbly consistency. Set aside. In a separate bowl, mix the pineapple, sugar and the remaining teaspoon of flour until the pineapple is evenly coated. Set aside for 15 minutes. Place the tortillas on an ungreased baking sheet. Spread each tortilla with half of pineapple mixture and sprinkle with the coconut mixture. Bake for 8 minutes or until tortillas are crisp. Cut each tortilla in 6 wedges and serve warm with vanilla yogurt, if desired.
