Vegetable Pork Stir-fry

3/4 pound pork tenderloin, cut into strips1 tablespoon vegetable oil1 1/2 cups (about 6 oz) sliced fresh mushrooms1 large green pepper, cut into strips1 zucchini, thinly sliced2 ribs celery, diagonally sliced1 cup thinly sliced carrots1 clove garlic, minced1 cup chicken broth2 tablespoons reduced-sodium soy sauce1 1/2 tablespoons cornstarch3 cups hot cooked rice


Brown pork strips in oil in large skillet over medium-high heat. Push meat to side of skillet. Add mushrooms, pepper, zucchini, celery, carrots and garlic; stir-fry approximately 3 minutes.

Combine broth, soy sauce and cornstarch; add to skillet and cook until thickened. Serve over rice.
